Indulge your Senses with Samantha Reid's Menu




Sam's philosophy of keeping her menu fresh and uncluttered worked really well.
Good preparation, good team work, good communication, good presentation, good tastes; total dedication.

Her menu happened to be presented to a group of hospitality students from a local high school. They are studying cookery subjects at school, but wanted to experience the big world.
First introduction - Tourism & Hospitality of the Hunter Institute on the Central Coast, which has gained a reputation for culinary excellence and this is what the students came to experience.

Jacqui Quick is no slouch, when it comes to fine dining.




Jacqui introduced her menu to the kitchen brigade last Tuesday morning when we started class, as one which was "not too complicated, yet designed for impact".
And boy, did she achieve.
Preparation went extremely smooth. All the menu items were well set up, including the little all important details and garnishes.
The cooking for service was professional and unhurried. A big thank you and congratulations to the team of students in the class, helping Jacqui with the high standard achieved.
Very precise presentation, good service control and calm execution of the menu, impressed all the students and most importantly, our customers in the restaurant.

Lynn-Marie, Precision, Heart and Soul




On the 9th of May it was Lynn-Marie Plumb's turn to present her menu and shine.
Lynn-Marie took great care to ensure all the team had all necessary ingredients to produce her chosen menu on the day she was the "student chef".
Lynn -Marie is not an apprentice and puts herself thought the course, taking time of her work. She is juggling home, parental responsibility, work, career and work experience in a commercial kitchen to achieve her dream.
The goal is to complete the course of a Certificate III in Hospitality - Commercial Cookery Trade with outstanding grades, knowledge and marketable skills in Cookery.
Her presented menu reflects the effort with only glowing feed back from the Preview restaurant patrons.

Jeffrey Olofsson shows them all how it is done




Jeff has them all organised with exemplary preparation and an eye for any detail.
The production of the restaurant menu was executed to his plan and service, from all accounts, went very smoothly. It is a credit to Jeffrey.
Unfortunately I was away on the day and couldn't be part of the exercise, but Sandra took the class and was only full of praise of everything. That's good enough for me too.
Jeffrey's paperwork of his preparation for his menu presentation to the Preview restaurant patrons will be used as a benchmark for future students of Commercial Cookery at Ourimbah.
So, well done Jeffrey!!!

Chef Scott Massey has the customers mesmerised




Scott's menu happened just before our Easter break here at the campus and was received to great acclaim. The make-up of the menu dishes was quite varied with a number of ethnical influences. This was handled really well by Scott and the group of third year apprentice chefs, working with him in this class. The team in the kitchen was inspired and our guests in the Preview restaurant enjoyed a lovely, colourful and very tasty meal. Service was elegant and pleasing, showcasing not just Scott's menu, but also the skills aquisition over a relatively short time by the service staff. So here are some of the pics.... and remember:
