These Martin's menu dishes. He worked with a crew of only half the class on Tuesday night. But what a culinary night it turned out to be.
His personal calm and organisational and technical skills ensured, that everyone worked to his/her full potential without any fuss. The crew was happy; the service worked a treat; the customers were happy; the class teacher was happy.

Certificate IV - Kitchen Management Course

Effective kitchen management skills are the essential ingredient in any successful dining establishment – it encompasses knowledge in the areas of human resources, industrial relations, occupational health and safety and cost control.
For cookery practitioners there isn’t always suitable opportunity to commit to full time study to secure said skills.
However, the Hunter Institute of TAFE has now established a “fast tracked” Certificate IV in Hospitality designed for individuals who wish to develop the skills and knowledge required to work as a qualified chef, performing a supervisory/team leadership role in a hospitality/catering enterprise.

AND THE FIRST GROUP HAS COMMENCED THE COURSE ON MONDAY, 15TH AUGUST.

They are 4th year apprentices, chefs, caterers, executive chefs, food & beverage managers, owner/operators from the Central Coast and northern Sydney.
Their study is undertaken in a range of modes, including:

  • research
  • self paced learning package
  • e-learning
  • group workshops
  • assignment work

With twelve subjects to cover, I say, they are going to be busy for the next couple of weeks anyway. Congratulations to the participants for taking the plunge.

This is what the inaugural group of diners feasted on, when our "Preview" restaurant opened its doors for the first time to the public this semester.
The talent of the evening was apprentice chef Mikaela.
See what you think of her dishes.
All the responses from the diners were most favourable, with only well cleared plates leaving the tables. A job well done.

Welcome to our new site

Welcome to the new Commercial Cookery site for apprentices and students of the Central Coast Campus - Ourimbah.
On this site we are planning to post the weekly restaurant menu pics, achievements, challenges, competitions and even blunders in the kitchen, we all make when learning (as long as the students are ok with that).
The student chefs on the Central Coast have a lot to offer and this is a means of showcasing their talents.
