Simon says...



Simon J's calm and quiet supervision saw two remarkable restaurant nights end with patrons' palates having been enriched by this young chef's menu selection.
While some found their favourite, others challenged their tastebuds and tried something new to them. The kitchen team rose to the job on hand on each Tuesday night and supported Simon admirably.


No young chef can showcase his or her talent without the support of a team of dedicated fellow apprentice chefs to back him/her up with technical skill and kitchen knowhow. This is what is happening here in our training kitchens every week of operation of the Preview restaurant. And a well done job it is.

Next week Sam, as the last chef in waiting, will conclude the series of final year cookery apprentices menu showcases of 2005. See you then.

A new chef reigns supreme





The last two weeks saw a new chef strut his stuff.
Dean J. ran the kitchens at Ourimbah for the last two Tuesdays and the crowd went wild. Some very nice handiwork was on display and our patrons enjoyed every morsel of it. Well done Dean!
With up-and-coming chefs of the calibre, as we have seen in this semester (and there are two more promising stars yet to shine for the Preview restaurant!), I'd like to think that an enjoyable dining experience on the Central Coast is assured.
